Well, I have felt really busy lately. I'm not as busy as a lot of people, but I'm still just having a hard time adjusting to all of the changes we've gone through since the move.
Last week, I planted flowers in my mother-in-law's planters. I was pretty excited because I bought most of the plants on clearance, and for the most part, they're perking up pretty well! We've had quite a bit of rain lately, so they're certainly not thirsty! These photos are from just a few days after planting, and they're even starting to look better! Yay!
I've also had my first Smoothie King since moving back, and man was it de-li-cious!!! Raspberry Sunrise, I love you!
Thomas and I have gone on a couple country drives so far, and I can honestly say that those are the times when I'm truly happy we're here. The hills and valleys, the winding roads, the sunshine and shade. Country drives are amazing.
I also went kayaking with my mom over the weekend. It was so incredibly peaceful and relaxing. I got a mondo sunburn from it, but it was totally worth it!
I am really loving my new job too! The people I work with are so easy-going and fun, and I look forward to getting to go to work! In case you're curious, I'm working for a wedding videography and photography studio. (Of course I have no talent for filming or editing, but I get to do all of the scheduling and office work.) I sort of really love working with artists, because I totally understand the creative side of things, but I get to be the organized calm in the middle of the creative chaos. It's super fun!
I've been making a few changes to my fitness program, trying to find a new rhythm. I'm getting a bike for my birthday (hopefully before my birthday), so until then, the bike riding is on hold. I also don't have a place to swim on a regular basis, and that's the part that's making me the most nervous. I'm fair at swimming, but I was just getting the hang of the form and breathing of lap swimming before we moved. So, I'm going to have to figure out what to do with that. But the running is still going well. I've changed Wednesdays to speed days where I run a 5k and try to beat last week's time every week, so that's what I did this morning. Mondays and Saturdays are the longer runs now. But that's enough about my fitness routine...
Oh! I almost forgot that I started a new scarf this weekend! If you follow me on Instagram, you would have seen a preview of that. But now I've got the loom all warped up, and I wove the first few rows the other night, so here's a sneak peek! (The dark blue is the warp; the white is just filler.)
That's about all I've got going right now. I did bake a batch of the Gooey Funfetti Cake Bars for everyone to take with their lunches this week, and boy are they good! If you haven't tried them yet, you should! (Ha! That kind of rhymed.)

Two Super Great Movies
Ok... So I've been neglecting the blog a bit lately. I'd like to excuse myself by saying that it was unconsciously done, but that just wouldn't be true. I've thought about blogging... It's been on my to-do list for a while... I just haven't felt like it. Really, I've been "pretty busy". And that's in quotes because I'm not really that busy. It's just that I'm a lot busier than I was before the move. There are so many changes that have happened that affect the amount of time I have in my day. And those things also affect what I want to do with that extra time that isn't already scheduled for something.
So anyway... here is a review of the two movies we've seen recently (both of which I loved), and then I will work on a more personal update post for later in the week.
X-Men: Days of Future Past - Oh! I was so incredibly excited when this movie lived up to my insanely high expectations. The first trailer is to die for, and that made so so anxious to see the movie. And so I am very glad that it lived up to everything I'd hoped for. It answered all of my questions. It dealt with all of the inconsistencies that could have created problems. The acting was superb. The X-Men characters that were chosen for this movie were perfect. Pretty much every single little thing about this movie was absolutely perfect. Ugh, just writing this post is making me want to see it again. If you're a big X-Men/comic book lover, then I'm not sure if you'll have the same feelings about it as I did (it is an original storyline that strays away from the comic books), but you should give it a try anyway. It was superb. And can I just say that the two versions of Professor Charles Xavier were one of my favorite parts. James McAvoy and Patrick Stewart together as the two different ages were amazing. Just amazing. I loved this movie.
Edge of Tomorrow - This movie was Groundhog Day with aliens. Just kidding; but that's the main idea. Tom Cruise's character is stuck waking up on the same day every time he dies. And while he's stuck there, he has to stop a war between humans and aliens. Emily Blunt co-stars in this action/sci-fi flick (don't you just love her?! I know I do.) and does an amazing job. This is the first time I've seen her in a role where she literally gets to kick butt, and she does it! I really loved the balance in this movie. I can imagine that it's difficult to show the same day happening over and over again without getting boring. Of course, the events don't happen the same way each time as Cruise and Blunt's characters take different actions. But they still have to keep coming back to a few key scenes to remind you that this "isn't his first rodeo". The plot was incredibly interesting, and I never would have guessed the ending (if Thomas hadn't leaned over and whispered it to me about two minutes before it happened). I really loved the two main actors and thought that they did a great job on screen. If you like sci-fi types of films, I would highly suggest this one!
So there are two great movies you could see this weekend. A couple of others that I haven't seen yet but am planning on seeing are: How to Train Your Dragon 2 (of course!!!), 22 Jump Street, and The Fault in Our Stars (I seriously need to read the book too.).

Yahweh-Yireh (Again)
I wrote a post last April about how the Lord provides in ways we often don't expect. That's what "Yahweh-yireh" means: the Lord will provide. And though more than a year has passed since that post, the Lord has not stopped providing for Thomas and me.
Our decision to move to St. Louis was so fast and so sure that we just knew God was laying out the path before us. When we prayed for God to basically smack us in the faces with the plan, He obliged.
And He has continued to assure us that this is His plan, and we are safe in His arms.
The biggest way He has provided since we got to St. Louis is with jobs. Within five days of moving here, Thomas and I both interviewed for and were offered jobs! Within five days! Now, if that's not proof that God still works miracles, I don't know what would be!
So we are getting settled in our new town, new home, and new jobs. It's still tough though. There are a lot of little things that hit me periodically to make me miss Florida and the life we had there.
The weather here certainly isn't helping. It has been cloudy and rainy pretty much everyday since we got here. And that's probably one of the things that's bothering me most right now. I sincerely miss the brilliant sunshine. But instead, this is what I've got:
I snapped this photo on my way home from work yesterday afternoon. Yes, in the middle of the day, this is how dark it was. Now, don't get me wrong, it did rain and storm occasionally in Florida, but not for a whole depressing week. I just have to keep remembering that the sunshine will return eventually.

June Julep Box
This month's Julep box is a definite win! Yes, I have already tried out the three new products I got in the mail on Monday. :)
The subscription I have gets me two polishes and one related beauty product each month, so here's what I got:
I love that the two polishes I got this month coordinate really well. Here's the manicure I did on Tuesday, even though its already chipped because I painted my nails and then promptly began a hardcore cleaning session... I should have known that was a dumb idea with freshly-painted, still-slightly-tacky nails.
I'm not exactly sure how well the base coat will work yet. It is supposed to help your nails breathe and grow better with polish on. And it also smooths out the surface of your nails so that your polish goes on more evenly, lasts longer, and doesn't stain your nails. (Cause who doesn't hate yucky colored nails?!) I did notice that I only needed one coat of each of these colors. I'm not sure if that's due to the pigmentation of these particular polishes or because the base coat was being awesome, but I'll make sure to follow up on that as I continue to try it out!

Auntie Anne's Copycat Pretzels
*Sorry about the low quality photos. It was late when I made these, and I was really impatient to eat them.
Saturday was National Pretzel Day. And as a foodie, I knew I just couldn't pass up a "holiday" like that. So, after dinner, I set to work making a very, very small portion of this recipe. Literally, I eighth-ed it. Yeah. The measurements got a little wonky, but it was a perfect amount to not have a ton of leftovers sitting around the house begging me to eat them.
Now, I have had several different soft pretzel recipes over the years. And I have to say, these were by far the best I've ever had. I did really like the One-Hour Soft Pretzels I tried a few weeks ago, but they weren't the consistency of a regular soft pretzel. These, however, were so soft. They were perfectly flavored. They were amazing.
My pretzels browned really quickly while baking, and I wanted to make sure they were done in the middle before I committed to taking them out. So I took one off the baking sheet and tore it in half right out of the oven. Of course, I tasted it to make sure it wasn't doughy... And ended up scarfing the whole thing down, juggling it back and forth in my hands and blowing on it and still burning my mouth. It was that good. I didn't even wait to brush on the butter or sprinkle a little extra salt on top of that one. These. were. amazing.

Makes: 12 pretzels

Ingredients:
2 cups milk
1 1/2 tablespoons active dry yeast
6 tablespoons light-brown sugar, packed
4 tablespoons butter, at room temperature
4 1/2 cups all-purpose flour, plus more as needed
2 teaspoons salt
1/3 cup baking soda
3 cups warm water
coarse salt, to taste
6 Tbsp butter, melted
Directions:

2 teaspoons salt
1/3 cup baking soda

Directions:
- Warm the milk to approximately 110 degrees. Add the yeast and stir until dissolved. Allow the mixture to rest for 5 minutes.
- In a medium-large bowl, combine the yeast/milk, brown sugar, 4 tablespoons butter, 1 cup flour, and salt. Whisk together until blended.
- Add the remaining 3 1/2 to 4 cups of flour and knead until the dough pulls away from the sides of the bowl. (You can use a stand mixer with the dough hook if you have one; I just did it by hand.) Cover the bowl with plastic wrap and let rise in a warm place for 1 hour.
- Preheat the oven to 450 degrees. Line two baking sheets with parchment paper.
- Punch the dough down and divide into 12 portions. (Or if you want smaller pretzel bites or sticks, divide as you see fit.)
- Roll each portion into a long rope. Cooking Classy suggests 32-36 inches.
- Combine the baking soda and warm water in a shallow bowl. Dip each pretzel rope into the mixture, making sure it gets completely coated. Place on the prepared baking sheet and shape as desired. Sprinkle with small amount of coarse salt.
- Bake for 7-9 minutes, until golden brown. Melt the 6 tablespoons butter.
- Brush each pretzel with melted butter and sprinkle with more salt if desired.

Peanut Butter Cookies for One
O. my. goodness.
Last night, I found myself at home alone (which is not normal for the evenings). And as I was sitting around doing very little of anything, I suddenly needed some peanut butter cookies. I love peanut butter cookies. And they're never a cookie Thomas would choose to eat. Sure, if I make them, he'll probably break down and have a few just because they're there. But, usually, peanut butter cookies are all mine to eat.
So this recipe is absolutely perfect for me! It's a single serving cookie recipe. And, I've done some single serving desserts previously (check out the Recipe Index), but never a traditional cookie, baked-in-the-oven, recipe.
These cookies were perfect! Seriously. They tasted amazing and were so soft and moist that they just fell apart in my hands and melted in my mouth. Depending on what size you make your cookies, you could get anywhere from 2 to 10 cookies from this recipe. Yes, it's a "single serving" recipe, but if you know what's good for you, you probably shouldn't eat all of the cookies in one sitting. (Apparently I don't know what's good for me.) But, oh, it was worth it!
This recipe comes straight from No. 2 Pencil, and she has several single serving recipes of all different varieties. And if you're into these types of recipes, you should definitely check out the blog. I have yet to try one of her single serving desserts that I did not like! You go, girl!

Peanut Butter Cookies for One
From: No. 2 Pencil
Makes: 2-10 cookies depending on size
Ingredients:
2 tablespoons butter
3 tablespoons brown sugar, packed
Pinch of salt
1/4 teaspoon vanilla extract
2 tablespoons peanut butter
1 egg yolk
1/4 teaspoon baking soda
1/4 cup + 1 tablespoon all-purpose flour
Directions:
- Preheat oven to 350 degrees, and line a baking sheet with parchment paper.
- In a small bowl, microwave butter until softened (a little melted is fine).
- Stir in brown sugar, salt, and vanilla.
- Add peanut butter, and stir until combined.
- Separate the egg white and yolk, and stir in only the yolk.
- Add the baking soda and flour, and stir one final time.
- Using your hands, roll the dough into as many cookies as you like and place them on the parchment-lined baking sheet. Flatten slightly with a fork.
- Bake for 8-10 minutes, until the edges start to turn golden brown.
- Remove cookies to a cooling rack to cool.
- Enjoy with a glass of milk for dipping! Yummy!

One Hour to Delicious Soft Pretzel Bites
You can change your toppings to suit your every whim. If you like your pretzels salty with some cheese sauce or mustard, you got it! For all you sweet tooth's out there, try cocoa or cinnamon sugar. I tried out a cinnamon sugar mixture and a cocoa and sugar mixture. Then the hubs and I chowed down on these with some Oreo Filling Dip. Yum yum yum!

Adapted from: Averie Cooks
Makes: about 30 small bites
Ingredients:
1 1/4 teaspoon active dry yeast
3/8 cup (1/4 cup + 2 tablespoons) warm water
1/2 teaspoon granulated sugar
1 cup all-purpose flour
1/4 teaspoon salt
1/2 tablespoon canola/vegetable oil
2 tablespoons butter, melted (for brushing)
Optional Toppings:
Kosher salt and mustard or cheese sauce
3 tablespoons granulated sugar + 2 tablespoons cinnamon
3 tablespoons granulated sugar + 2 tablespoons cocoa powder
Directions:
- Begin by proofing your yeast. Stir together the yeast, sugar, and warm water in a small bowl or measuring cup. Let it sit for 10 minutes. (If the yeast foamed up and about doubled, you're ready to move on.)
- Stir together the yeast mixture, flour, salt, and oil. Knead for about 5 minutes either by hand or with a stand mixer. The dough will be firm and smooth.
- Divide into two lumps and using your hands, roll each one out into a long rope (about the length of your cookie sheet). No need to flour the counter for this step. Then cut each rope into 1 inch sections.
- Place on a cookie sheet lined with parchment paper or sprayed with cooking spray. Make sure none of the bites are touching.
- Preheat your oven to 350 degrees and allow the bites to rest on the stove while the oven is warming up.
- Bake for about 16-18 minutes, until the pretzels are just barely starting to brown. You don't want to over cook them because the will turn out hard.
- While the pretzels are in the oven, melt the 2 tablespoons of butter and prepare your toppings.
- When the pretzels come out of the oven, brush them generously with butter and top with your desired toppings. *An easy way to top these is to place your topping in a large baggie, then throw the bites into the baggie and shake it all up.
- Enjoy! Store any leftovers in an airtight container. Before eating leftovers, place in microwave for about 15-30 seconds to warm and soften them. Eat within two days.

Copycat Five Cheese Ziti from Olive Garden
Today's recipe could not be more of a win if it tried! I found this recipe via Pinterest several months ago, and since then it has become a favorite staple in our house.
I love it for so many reasons!
The mixture of sauces is incredibly creamy and the blend of cheeses make this dish rich and flavorful! Oh so yum! One of my main suggestions is to buy a sauce that you know has good flavor. The sauce is one of the main ingredients in this meal, so if you buy tasteless sauce, it will definitely affect the pasta. I absolutely love Prego Mushroom for the red sauce and Classico Light Asiago Romano for the alfredo.
Five Cheese Ziti
An Olive Garden Copycat Recipe
Adapted from: Pearls, Handcuffs, and Happy Hour
Servings: 6-8
*Optional: I like to throw all the ingredients together in the morning and leave it in the fridge all day so that all of the flavors start to meld together. This is not required, but a very delicious option. Then, I just have to pop it in the oven when dinnertime rolls around.
Ingredients:
1/2 pound penne pasta
1 1/2 cups marinara sauce (I like Prego Mushroom.)
1 cup alfredo sauce (Our fave is Classico Light Asiago Romano. It's got a lot less fat than the originals and it has a really nice flavor.)
1 cup shredded mozzarella cheese
1/2 cup parmesan cheese
Directions:
I love it for so many reasons!

- Preheat the oven to 350 degrees.
- Cover pan with aluminum foil. Bake for about 30 minutes, stirring once or twice during the baking process.
- Let cool for a few minutes before serving.

Meatball Sliders {Wednesday Wins}
We recently had these meatball sliders for dinner, and o my goodness, they were delicious! These are perfect for dinner with a fresh salad. The meatballs are stuffed with Italian seasoning goodness. And the Italian bread rolls go perfectly. Top them off with a little mozzarella and Parmesan and you've got a great Italian dinner!
They'd also be just as perfect for a potluck party! You can make the meatballs and rolls smaller if you'd like to feed more people. To keep the meatballs and sauce warm, just pop them in a crock pot after they've been cooked. They'll be welcome at any occasion!
I just used my mom's recipes for both the meatballs and the Italian bread and tweaked them both a bit to work for this meal!

Italian Rolls
Adapted from: My Mom's "Mess Up" bread
Makes: 12 rolls
Ingredients:
3/4 cup warm water
1/2 tablespoon margarine, softened
1/2 tablespoon oil
2 cups + 2 tablespoons bread flour
2 1/4 teaspoons sugar
3/4 teaspoon salt
1 teaspoon yeast
butter, for greasing
Directions: *If you have a bread maker, just put all the ingredients in your bread maker and set for dough. This should take care of all of the kneading and the first rise, so you can start at step 7. For those of you that don't have a bread machine:
- Add yeast to warm water and stir.
- Put 1 cup flour, the salt, and the sugar in a large bowl, add water and yeast; mix thoroughly for 2 minutes.
- Add oil and margarine; mix thoroughly for 2 minutes.
- Add remaining flour until dough is firm, but still elastic.
- Knead on a floured surface for 5 minutes.
- Place into a well-greased bowl. Cover and let rise for 1 hour.
- Grease a 7x11 pan with butter.
- Divide dough into twelve rolls and shape into balls as best as possible. Place the rolls into the pan.
- Cover and let rise in a warm place for 1 hour. (While the rolls are rising and baking, you can prepare the meatballs.)
- Bake at 375 degrees for 25-40 minutes until nice and golden brown.
Meatballs
Adapted from: My mom
Makes: 12
Ingredients:
1/2 pound ground beef
1/2 pound Italian sausage
1/4 cup milk
1 beaten egg
3/4 cup Italian bread crumbs
1 teaspoon Italian seasoning
1 teaspoon salt
2 tablespoons Parmesan cheese
1-2 cups marinara sauce
Directions:
- Combine eggs, milk, Italian seasoning, salt, and Parmesan in a large bowl.
- Add enough breadcrumbs to make a ball.
- Add meat and mix well. Beware, the best way to do this is with your hands, but they will get really, really cold!
- Roll into 2 inch balls. Adjust the sizes so that you end up with 12 large meatballs.
- Place in a skillet and brown slowly on a low heat, stirring often.
- Drain on a paper towel.
- Cover with your favorite marinara sauce.

Grocery Shopping "Wins" Without Going Crazy for Couponing

So, I will preface this post with this: I don't do extreme coupon-ing. I just don't. I do realize that it could save me more money with my grocery bill, but that's just not something I'm willing to spend a lot of time on right now. It's not that I don't use coupons when I have them; it's just that I don't go out of my way to collect them.
So that being said, I have been working on saving a little money in my grocery shopping recently. And I have some (non-coupon) tips that I'd like to share for anyone else out there who's trying to pinch a few pennies.
1. The less you shop, the less you buy. This one is pretty simple: If you go to the grocery store fewer times per month, you have less chances to succumb to the ever enticing impulse buy. I have started trying to go to the grocery store once every two weeks (with the occasional extra trip for milk), and I have noticed a huge difference in the amount I spend at the store. It's just so simple to think that if you're not walking around the store every three days, you won't see things you're tempted to buy but don't need.
2. Meal Plan and Make a List. This one is a definite must to save some cash. If you know what meals you'll be eating for the month, you know exactly what you need to buy and when you need to buy it. I have started planning out the entire month's worth of meals at the end of the previous month. Though it's a chore, if you get the whole family involved in requesting their favorite meals and brainstorming, you can have it completed in no time. After that, make a big list so that you can buy most of it in one big trip. But also, don't fret too much when the schedule changes and you have to move one or two things around; life happens.
3. Shop with a Buddy. This one might or might not work for you. I have noticed that when I shop with Thomas, I'm much less likely to buy things we don't need. He's not critical or anything, but I think twice about putting something unnecessary in the cart in case he asks what we need it for and I don't have an answer. I also like him there because I can send him down an aisle that tends to be extra temptation for me (the bakery area). Then I get the one item I need without the temptation of everything else in the aisle. However, if your buddy is an impulse buyer, this one might not work out so well for you.
4. Watch for Deals on Items You Use a Lot. Unless I cook something special for breakfast, Thomas has cereal almost every morning. So I know that I always need to have cereal that he likes in the pantry. That means that I walk down the cereal aisle every time I go to the store. If things he likes are on sale, I stock up on them so that I don't have to buy them when they aren't on sale. This is the same with the frozen vegetables I buy. (I'm a brand snob on those.) We eat a lot of them, so I buy as much as I can when they're on sale because I know we'll use them before the go bad.
5. Pay Attention to the 'Price Per Ounce'. When buying items where you have a choice of size, look at the price per ounce on the price tag. A lot of times, if you buy the bigger box of cereal, rice, etc. you get a better deal. Sometimes, it can be a huge difference! But make sure you only buy the bigger size if you know you'll use it before it goes bad. The same thing goes for deciding between two different brands, etc.
So those are a few small tips for your grocery budget. They won't make an enormous dent, but you will definitely find yourself with a little extra cash at the end of the month!

A Few Small Wins
I've been preoccupied the past few days with making sure Thomas' birthday was a success so I've racked up a few wins to mention today!
Like I said, just a few small happinesses. But that's what matters!
- Thomas' birthday was a big success. Everything went well, and Thomas and I had a good time celebrating.
- We still have some of his birthday cheesecake in the fridge, and it is all I can do to not devour it while he's at work. I figure since it's his birthday dessert, we should probably eat it together.
- We have been having some absolutely perfect weather here in Florida! The days are just spectacular with the perfect temperature, sunshine, and a breeze coming off the ocean. It's enough to make any thoughts of a bad day just float away!
- I went for a run today (first one in a little while; I've been lazy lately), and it felt pretty darn good. I was surprised at how well it went. I was expecting my little unplanned hiatus to really kill me, but it didn't!
- I've got {almost} all of our dinners planned for the month of March! I'm trying to be really good about planning to see if I can lower our monthly grocery budget.
- My kitty is being really adorable sometimes! On Saturday, Thomas had to work later than normal (usually he's home by lunch), I was bummed about having to eat lunch by myself. But then... I didn't. Apparently I had a lunch date with Lolo and just didn't know about it! She sat across from my tv tray while I ate my lunch, mainly because she wanted me to share, but I like to think she knows that that stuff warms my heart!
Like I said, just a few small happinesses. But that's what matters!

Chocolate Covered Strawberry Cake Balls
Ok... I know that title is a mouthful. But so are these delicious cake balls! The strawberry cake and the milk chocolate coating are the perfect combination!
Top them off with some cute sprinkles (like the adorable Valentine's sprinkles I found at the store) or a white chocolate drizzle and you have a finger-food dessert that is great for any time of year! And they're also perfect for a party since one batch makes about 60 cake balls! Be ready to share!
Beware though, these are a little intense to make. It would be absolutely perfect if you had a friend to help share the work, but it is completely possible to make these little beauties on your own. They are just a little high maintenance but totally worth it!

Makes: 50-60
Adapted from: Tidy Mom
Ingredients:
1 boxed strawberry cake mix, prepared and baked as directed
1/2 - 3/4 tub of icing of your choice (I used some strawberry and some cream cheese)
about 1 pound milk chocolate
1-2 tablespoons Crisco
White chocolate and/or sprinkles for garnish

Ingredients:
1 boxed strawberry cake mix, prepared and baked as directed
1/2 - 3/4 tub of icing of your choice (I used some strawberry and some cream cheese)
about 1 pound milk chocolate
1-2 tablespoons Crisco
White chocolate and/or sprinkles for garnish
Directions:
- Prepare and bake strawberry cake as directed on package. Allow it to cool completely.
- Crumble the cake into a large bowl. Mix in the icing with a mixer, spatula, or your hands. Make sure you completely combine the icing and cake.
- Roll the mixture into balls about 1 inch in diameter, and place on a baking sheet lined with parchment paper.
- Place in the freezer for about 1 hour to firm up.
- Before removing the cake balls from the freezer, melt the chocolate and Crisco in the microwave at 30 second increments until smooth.
- Use a toothpick to dip cake balls in chocolate and place on waxed paper to dry. The chocolate will dry very quickly, so make sure to add the sprinkles (optional) quickly.
- Add white chocolate garnish when milk chocolate has dried (optional).
- Refrigerate until ready to eat. These can be served cold or at room temperature.

What's Up With Wednesdays? {Wednesday Wins}
So apparently my car doesn't like me on Wednesdays anymore. If you recall, last Wednesday, I locked my keys in the car (only the second time I've done that in the almost 10 years I've been driving). Ok, so I guess that wasn't really my car's fault. Today, however, it just died. And I'm pretty sure it wasn't my fault. Thankfully, my wonderful hubby was available to come rescue me...again. (I really hope he likes damsels in distress, because that's apparently what I'm becoming.) Unfortunately though, it had to be towed, and we have no idea what is wrong with it and how much it will cost. So, if I even have a car at my disposal next Wednesday, I'm pretty sure I will be avoiding using it! Lol.
It's funny, though, how this all ties in. Our church is currently in the middle of a two week revival. And to be honest, before it began, I was not excited about the prospect of having all of my free weeknights taken up with church services. We have gone, however, and God has used the revival to teach me/remind me of several things. And one of the two main things He's spoken to me about is needing Him every minute of every hour of every day. The revival leaders have said the phrase "God I need you" so many times, encouraging people to pray that phrase to the Lord as many times as you can throughout the day, not just in times of trouble.
And today, as I was driving away from the house to take myself to lunch with a good friend a.k.a. a good book and then do a little leisure shopping, I was feeling pretty good. Monday and Tuesday weren't very good days for me. Nothing really bad happened, they were just blah and rough. But this afternoon, I was doing worlds better, especially at the prospect of spending a relaxing afternoon out of the house. But that phrase popped into my head as I was driving down the road thinking about how good of a mood I was in. And so I prayed in that moment, telling the Lord that I need Him even in the good days. Because only He knows what else will happen in my day. And it's on the good days that really bad things tend to blindside you and end up that much worse.
So when, after my last stop of the day (getting gas), the car would not start, yet my day was not ruined. God had maybe somewhat prepared me because I remembered praying that prayer and almost laughed at its significance. So, even though the car is now in the shop with who knows how much money's worth of repairs awaiting it, I'm not worried. It's still almost comical. Especially since it's the second Wednesday in a row I've had car issues. So thank you to the Lord for always being there when I need you, which is on the good days and the bad.
So, now that that story has been told, let's back up in my day a little bit. I had some delicious lunch at Panera (my favorite, and one of the only places I really feel not-awkward eating with only a book for company). And then I was going to head over to Ulta because I really wanted to spice up my eyeshadow collection (which is extremely limited), and grab a high quality clear coat nail polish so that my color polish would stop chipping so quickly after I paint my nails. But, when leaving Panera, I had the (fabulous) idea to stop by Marshall's first because they usually have some O.P.I. nail polishes really cheap, and I just enjoy walking around and looking at all the home decor, etc. And check it out:
I grabbed all of this for less than $15!!!
I'm not familiar with the E.L.F. brand, but I don't even care... I mean, look at all those colors!!! I just love that I got so many colors to try out and see what I like. There are a lot of warm neutrals with the brights to mix it up!
And the only thing I was unsure of when I decided to buy a high-quality clear polish a few days ago was finding the right product. I wanted a good brand (which usually means expensive, I'm a little more picky about my nail polish brands), but I also knew that good brands almost always have ninety million types of clear coats, and I wasn't sure what I was going to need. So this little trial set gives me four different options to try out, so I can figure out what I like before I buy a full-size bottle. I'm also excited that the set includes a nail hardener. My nails have been in pretty poor shape lately and could really use a boost!
I ended up not even going to Ulta because I had already gotten more than I bargained for at a much cheaper price! Thus, God also gave me a really good day before the tough part hit. Because the Lord is with me at all times, I am still having a great day in the face of a pretty big setback. Thank you to God!

Let Me Tell You About My Day
So this morning, I had breakfast with a great friend that I haven't seen in a while. And it was wonderful! The cinnamon crunch bagel with honey walnut cream cheese from Panera was to die for too!
However, after breakfast, I had plans to head across the road to the bank ATM and then to Publix (they're right next to each other). So, I went over, and since I just needed some cash from the ATM, I just grabbed my wallet and hopped out of the car... leaving everything else inside... "everything" also includes my keys and my cell phone. Awesome. (Please note the sarcasm.)
Thank goodness the bank was just opening so that I could head inside and use a phone. And thank goodness Thomas was able to come right over to unlock the car for me. And thank goodness I could just walk across the parking lot to Publix and still get most of my grocery shopping done while Thomas was on his way. (I say "most of my shopping" because guess what else got left in the car?! Yep, my shopping list.) At least then time wasn't wasted, but I was more glad that I didn't just have to stand outside by the car like an idiot for 20 minutes.
But... other than that minor hiccup, I don't have any complaints about my day! It's quite productive, and of course, we always have trivia to look forward to on Wednesdays!
Ooh, and I bought some fresh strawberries at the store this morning (maybe a little consolation prize for me being dumb), and I can't wait to eat them with the creme brulee we're having for dessert tomorrow! I will really try to take some photos this time so that I can blog the fabulous recipe!

A Few Collected Updates {Wednesday Wins}
Well, since I haven't blogged any Wednesday Wins in a while, here are a few from the past week or so...
I finished puzzle #2 and am on to #3. This third one is an ENORMOUS, 2,000 piece puzzle that I got last Christmas (?), and it is so big, I can't put it together on my weaving/craft table. It only fits on the kitchen table. Which is why I've never succeeded in putting in completely together before. I started working on it when I first got it, but we got really tired of perpetually eating on tv trays before I could get anywhere close to finishing it. So this time, I'm trying to put it together in sections on my craft table, then when it's close to being finished, I will transfer it to the kitchen table for the final touches. We'll see if that plan actually works or not.
We started up trivia again tonight after a two week break for the holidays. We did terrible, but it's still fun. Better luck next week I guess!
I got a JoAnn's gift card for Christmas, and today I used it to buy some fabric for another maxi skirt. The fabric is a bold coral and black stripe, so I'm excited to see how it turns out. I'm not so sure how the challenges stripes present will mesh with my compulsive impatience while sewing! Yikes!
I made creme brulee variation number 3 (banana) a few days ago, and it was also a major success! I will definitely have to share those recipes soon. I used my new donut pan for the first time also. Another good recipe I'll have to blog. I also have a dinner recipe ready to go. I just have to get with the program and actually post these things on the blog. (I have yet to get a photo of any of the creme brulees yet... They usually get devoured the second they are ready to eat.)
A recent blessing was Beth Moore's book sale on Amazon. In the past few days, she had a ton of ebooks for sale for free and for $.99!!! So, needless to say, I downloaded at least ten of her books and only spent a few dollars! I'm currently using "Praying God's Word Day by Day" as a sort of prayer devotional each day. I have been trying to incorporate more scripture into my prayer life, so it's really nice to have a guide to help with that! Loving it! I can't wait to get started on some of her other books too! You should definitely check it out, but I'm also not sure how long these books will be on sale, so hurry!
My kitty cat has become really cuddly lately, and I am soaking it up! She will even fall asleep on me while I'm sitting on my stool working on the puzzles. She has been initiating the cuddles at least once a day to take a nap on my lap! And it's so stinkin' adorable!!!!! I could post about 900 pictures of her, but I will spare you! You're welcome.

Looking More Like Christmas {Wednesday Wins}
(And by looking more like Christmas, I mean inside our apartment. It is a tad harder to channel Christmas vibes outside of our home because it's over 80 degrees everyday. Not that I'm complaining... especially when the high in Missouri was 25 the other day. Yikes!) Anyway...
Woohoo! It is Wednesday. And Wednesday is one of my favorite days right now. It means trivia night at Buffalo Wild Wings. And I look forward to it every week!
And this week... with the help of some good friends... we won second place! Woohoo!!! Yay! The winning $30 part was pretty awesome, but we also just had a really good time, and we felt like we played a really good game, win or lose. So, that's exciting!
Also, I put the first present under the tree today!!! I've wrapped several others, but some were mailed back to Missouri, and others are just still hiding around the apartment.
I'm also excited that I'm getting pretty close to finishing my Christmas shopping. I just have a few more things to get! I was hoping to finish tomorrow, but I'm not sure if that will happen or not. We'll see tomorrow I guess!
I'm hoping to have another dinner recipe to blog tomorrow or Friday. And then I'm sure I will blog about some of my Christmas baking... which really means my mom's Christmas baking (since I make all the things I grew up on).
We also have a lot of Christmas parties in the next few days! One on Saturday, Two on Sunday, and one on Tuesday. Wow! Busy, busy fun times!

Feeling Accomplished {Wednesday Wins}
Well, I have been feeling accomplished the past few days. But, accomplishment does not come without its frustrations either.
First Win: I finished another scarf already! I wove it so fast that I didn't even take a picture of the warp for a sneak peek. I really should have though. The warp by itself was just mesmerizing. It made me think of peacocks and circuses. The colors are so vivid and lively.
Win #2: I am reading a book that was actually written for adults! It's true, I'm generally much more enraptured by the endless possibilities of teen fiction. It seems that adult readers just won't stand for such outlandish and unthinkable things like magic powers, imaginary worlds, talking animals, and heap loads of daring rule-breaking. However, right now I am reading a book that was written for an adult audience! Wow! This is also where the frustration comes in... a lot of the book is set in the early 1900s, and that's exactly how it reads. The phrasing and diction are a challenge to follow sometimes. In a section I read just today, the author went on for the long half of a paragraph about the behavior of electrons, and the subject of the book has nothing to do with science! It is very rambling, winding, and descriptive, but I'm enjoying it nonetheless. It's an impossible love story at heart, and I'm a sucker for that kind of thing.
Third Win: Thanksgiving is tomorrow (and Friday, for me), and I can't wait! I love Thanksgiving! I wish it was not followed by Black Friday, but I just decide to act like Black Friday doesn't exist. Yay! A holiday that is purely for stopping to think about all the wonderful things we have in life is just wonderful!
Last one: The weather today is just to die for! All the windows in the house are open, and it's a beautiful, sunny, breezy 74 degrees! Love it!

First Win: I finished another scarf already! I wove it so fast that I didn't even take a picture of the warp for a sneak peek. I really should have though. The warp by itself was just mesmerizing. It made me think of peacocks and circuses. The colors are so vivid and lively.
Win #2: I am reading a book that was actually written for adults! It's true, I'm generally much more enraptured by the endless possibilities of teen fiction. It seems that adult readers just won't stand for such outlandish and unthinkable things like magic powers, imaginary worlds, talking animals, and heap loads of daring rule-breaking. However, right now I am reading a book that was written for an adult audience! Wow! This is also where the frustration comes in... a lot of the book is set in the early 1900s, and that's exactly how it reads. The phrasing and diction are a challenge to follow sometimes. Scarves=My Fave Accessory {Wednesday Wins}
Welp, I finally took this baby off the loom, got it all finished up and ready to go, and..... I don't love it. Lol. Not surprisingly, this happens sometimes. Usually when I try to push out of my comfort zone and use different colors/materials that I normally wouldn't gravitate towards.
I DO like the way the pattern turned out. I like how scrunchy and thin it is. It looks a little messy and lived-in, and I like that about it. I always love the way this yarn feels too. How could you go wrong with 100% silk?!
The thing I don't like about it is mainly the color. I chose these colors, if you remember, because they were like a less ukky version of fall colors. As it turns out, I just still don't love it. I'm more of a vivid, vibrant, pop color kind of girl when it comes to my scarves. This one just isn't quite as bright as the ones I normally tend towards. (It doesn't help that fall is my least favorite season. I'm a summer girl, and I like summer colors.)
Also, it doesn't help that it started raining today before I could take the photos. So the lighting was all wonky. I was able to edit them up a bit, but I never really feel like photos show the true colors anyway.
So, you're probably thinking, how is this a win? True, I don't love the scarf, and it will probably go in the closet with the other scarves that I'm not crazy about and therefore hardly ever wear, but it is just such a sense of accomplishment to finish something tangible. Something that took hours to complete and was frustrating. And one of the best parts of weaving, for me, is getting to pick out the next one and warp it onto the loom, watching the colors come together! (Speaking of that, I already warped up another one last night! I'll take some photos when the lighting is better, a.k.a. when it's not raining.) So, finishing it is a win, even if the scarf itself isn't.
One last thing, (not to be a saleswoman or anything) if you ever like a scarf I've made or want one made-to-order, I'd love to weave one for you if you're willing to cover the cost of the yarn. Just as an example, this scarf is made of really nice quality yarn (and of course it's my fave) and it cost me about $15 to make (so this one's up for grabs if you like it; like I said I'll probably never wear it!). So, just let me know if you ever want one!

Ranch Chicken Pockets {Wednesday Wins}
Ok... so I've felt so bad that I haven't blogged any recipes in a while that I thought you should get two in a row! Also, today's recipe really is a win! Every time I tell Thomas that we're having these chicken pockets for dinner, he just about drools. We love them so much, and they're incredibly easy! Lots of times, I stir up the filling earlier in the day or even the night before so that it's super quick to just toss everything together at dinner time! We usually eat these with a green veggie for a simple and delicious meal!
Ranch Chicken Pockets
Adapted from: Will Cook for Smiles
Makes: 8 pockets
Ingredients:
1 can of crescent rolls (8 rolls)
1-2 cups chicken, cooked and shredded
1 packet Hidden Valley Ranch seasoning mix
3-5 ounces cream cheese
1/4 shredded cheese (I use cheddar)
Directions:

Makes: 8 pockets
Ingredients:
1 can of crescent rolls (8 rolls)
1-2 cups chicken, cooked and shredded
1 packet Hidden Valley Ranch seasoning mix
3-5 ounces cream cheese
1/4 shredded cheese (I use cheddar)
Directions:
- Preheat oven to 375 degrees.
- In a mixing bowl, stir together the chicken, ranch seasoning, cream cheese, and shredded cheese. (To make sure I'm really happy with the consistency and taste, I start with the smaller amounts listed (about) and taste and add more if I want to tweak it. We really like the creaminess, so I may add a little extra cream cheese.)
- Spread the crescent roll dough out and separate into 8 individual rolls. Spoon chicken mixture onto each roll, then seal each roll completely. (They may not look very pretty, but make sure they're sealed.)
- Place on an ungreased cookie sheet. Bake for 10-12 minutes, or until the rolls start to brown nicely.
- Eat and enjoy!
